Walton County, the Scenic Highway 30A beach towns

30A, Florida: a beach road strung with lakes you will not find elsewhere

Scenic Highway 30A links a run of small Walton County beach towns, and between them sit tea colored lakes that open to the Gulf only when the rain says so. Here is how the road eats, what is on the calendar, and a market supper to cook at home.

Lakes that breathe with the Gulf

Most people come to 30A for the white sand and green water. The odd thing about this stretch of Walton County is what sits just behind the dunes. Visit South Walton counts 15 coastal dune lakes here, a landform so uncommon that the county's tourism office lists only New Zealand, Australia, Madagascar and the United States as places to see them.

The lakes were shaped by wind and waves over thousands of years, and they never sit still. They average about five feet deep, ringed by dunes up to 30 feet high. When rain and creek water fill one, the lowest point of the beach gives way. Locals call it a blow out. Lake water rushes to the Gulf through a temporary outfall, salt water washes back in, and in time the sand seals the gap.

That push and pull keeps the water brackish and the life inside it varied. Fallen leaves and other organic matter steep in the lakes and stain them a copper brown, like strong tea, which looks odd next to the turquoise surf but feeds an unusually rich habitat. Western Lake, beside WaterColor, is the one most visitors paddle, and Grayton Beach State Park and Topsail Hill Preserve State Park both reach the shore of a lake. Anglers fish them for salt and freshwater species alike, depending on how recently a lake last opened.

Seaside, and the way 30A shops for supper

The food side of 30A starts in Seaside. Robert Davis inherited the land from his grandfather in 1978, and building began in 1981 with two houses, one street and a beach pavilion. The town now counts more than 300 homes plus restaurants, shops and galleries, and its compact center is where much of the road comes to eat.

On Saturday mornings the Seaside Amphitheater fills with the farmers market, rain or shine, from 9 AM to 1 PM. It is a producer's market: local growers, bakers, cheese makers and gardeners, with cooking demonstrations and seed swaps in the mix. Airstream Row, the line of food trucks parked in silver trailers, sits right beside it. Buy vegetables at one end, a late breakfast at the other.

Hurricane Isaias came ashore near Destin on October 9, 2026, as a Category 2 storm. Walton County Tourism reported on October 16 that many businesses had reopened while some amenities stayed limited, so check its update page before a fall trip.

Cook it at home

Sheet pan Gulf shrimp with Saturday market vegetables

Shop the Seaside market for whatever looks best, pick up shrimp on the way back, and let one hot pan do the work while you catch the sunset.

What you need

  • 1 1/2 lb large Gulf shrimp, peeled and deveined
  • 1 lb small potatoes, halved
  • 2 sweet peppers, 1 zucchini and 1 red onion, cut into chunks
  • 1 pint cherry tomatoes
  • 3 tbsp olive oil, divided
  • 1 1/2 tbsp Beautiful Sunset, divided
  • 1 lime, and Grand Isle Hook Set Sauce to finish

How it goes

  1. Heat the oven to 425F. Toss the potatoes with 1 tbsp oil and a third of the Beautiful Sunset, spread them on a sheet pan and roast 20 minutes.
  2. Toss the peppers, zucchini and onion with another tablespoon of oil and another third of the rub. Add them to the pan and roast 10 minutes more.
  3. Pat the shrimp dry and coat them with the last of the oil and rub.
  4. Push the vegetables aside, lay the shrimp in a single layer, scatter the tomatoes on top and roast 6 to 8 minutes, until the shrimp are pink, opaque and curled into a loose C.
  5. Squeeze the lime over everything and pass the Hook Set Sauce at the table.
Worth knowing. Shrimp go from tender to rubbery in about a minute. Pull the pan as soon as the thickest one turns opaque in the center.
