Collier County, Naples Bay and the Gulf

Naples, Florida: where stone crab season gets its opening night

Naples is known for Fifth Avenue shops and a famous pier, but its food story starts on the bay side, where the town grew up around a waterfront you could once reach only by boat. Every October the season's first stone crab claw is cracked there. Here is the calendar and a claw salad for home.

A town that faced the water

The organizers of the Naples Stone Crab Festival put the city's history plainly: Naples and its neighboring communities were all founded around the waterfront in the 1880s, and until 1915 the only way to get to Naples was by water. That bay side waterfront, around Naples Bay and the Gordon River, is still where much of the seafood eating happens.

Collier County's tourism office calls its stretch of coast, from this city down through Marco and the Ten Thousand Islands, the birthplace of the stone crab business and one of the biggest sources of claws in the nation, with family fish houses and generations of crabbers working the waters south of town.

On the Naples side, the bureau lists Kelly's Fish House on the Gordon River as the city's oldest seafood restaurant, and points to the Tin City waterfront, Swan River Seafood and a string of other kitchens that serve claws in season. The Gulf side has its own pull: the Naples Pier and the beach below Fifth Avenue South and Third Street South, which is where most visitors start.

Cracking the first claw

Stone crab season in Florida opens on October 15, and Naples marks it a week or so later. The Naples Stone Crab Festival, now in its 17th year and sponsored by the Old Naples Waterfront Association, opens on a Friday evening with the traditional cracking of the first claw, then moves through a weekend of seafood, live music and arts and crafts at Tin City and waterfront businesses, with free water taxis between them.

Recreational crabbers can trap their own in season. The daily cap is a single gallon of claws for each person, and a boat never holds more than two. A claw has to measure 2 7/8 inches or longer, each person can work five traps at most, egg bearing females are off limits, and every crab swims away alive.

From the lineup

Three bottles for stone crab season

Sweet claw meat does best with acid and a gentle hand. These cover the claws and the rest of the weekend.

Cold Water

Medium, 3.5 oz, $9

Our Latin shaker, warm from ancho and cumin and bright from dried lime. Just a pinch in a citrus dressing flatters crab without hiding it.

Grand Isle Hook Set Sauce

Some Heat, 8 fl oz, $12

Red jalapeño heat over roasted red pepper. Shake it into the dressing, or dab it straight onto a cracked claw.

Mobile Bay Mustard BBQ

Medium, 8 fl oz, $12

Named for Mobile Bay: tangy, mustard forward and gently sweet. Mixed half and half with mayonnaise, it is the mustard sauce claws are served with.

Cook it at home

Stone crab and avocado salad with lime

When you have more claws than you can eat straight from the shell, pick the meat and turn it into a cool salad for a Naples lunch.

What you need

  • About 1 1/2 pounds of claws, already cooked and well chilled
  • 2 ripe avocados, diced
  • 1 small cucumber and 1/4 red onion, finely diced
  • 2 limes, olive oil and a handful of cilantro
  • Cold Water
  • Grand Isle Hook Set Sauce and butter lettuce leaves

How it goes

  1. Crack the claws under a towel, peel away the shell and pick the meat into large pieces, checking for bits of shell.
  2. For the dressing, whisk both limes' juice into 3 tablespoons of olive oil, then season it with Cold Water and Hook Set to taste.
  3. Fold the avocado, cucumber, onion and cilantro into half the dressing.
  4. Add the crab and the rest of the dressing and turn it once or twice so the meat stays in chunks.
  5. Spoon into lettuce cups and serve right away, while it is cold.
Worth knowing. Stone crab claws are cooked at the dock, so they need no heat at all. Keep everything chilled and dress the salad just before it goes to the table.
