Nueces County, the Coastal Bend

Corpus Christi, Texas: the city that built a two-hand burger

In August 1950 a burger stand opened on Ayers Street with one goal: a burger so big it took two hands to hold. Here is how that stand grew out of this bayfront city, when Buc Days takes over downtown, and how to griddle a big burger at home.

A stand on Ayers Street

Corpus Christi counted 317,863 people at the 2020 Census, and it wraps around Corpus Christi Bay with its city limits running out onto North Padre Island. Plenty of seafood is eaten here, but the dish the city sent around the country came off a flat top grill.

On August 8, 1950, Harmon Dobson opened the first Whataburger on Ayers Street, working with Paul Burton. The company's own history says his goal was a burger so big it took two hands to hold and so good that one bite made people say the name out loud. In 1953 the first franchise opened in Alice, and in 1959 the first store outside Texas opened in Pensacola.

Corpus Christi keeps turning up in that history. A local artist, Will Clay, won the 1973 contest that produced the Flying W logo. The flagship Whataburger by the Bay opened in the city in 1999, and in 2004 Whataburger Field opened as home of the Corpus Christi Hooks, a Class AA baseball team.

In 2001 the Texas Legislature recognized the chain as a Texas treasure, and the head office stayed in Corpus Christi until it moved to San Antonio in 2009. Out on the island side of town, the National Park Service holds public sea turtle releases on Malaquite Beach at Padre Island National Seashore each summer, and Nueces County reopened the rebuilt Bob Hall Pier in February 2026.

What makes the city's burger its own

The company history describes the build that made it famous: never frozen beef on a big toasted five inch bun, made to order with the extras you ask for. Grilled jalapenos are one of those extras, and jalapenos joined the menu in 1973, the same year as onion rings.

That is the template for the recipe below. A wide, thin patty with a hard sear, a toasted bun big enough to need two hands, and jalapenos charred on the same griddle. It is a backyard tribute, not a copy, and the smoke comes from a rub instead of a secret.

Bottles for a Corpus Christi burger night

A smoky rub for the patties, a hot sauce for the bun, and a garlic blend for everything else on the grill.

Turnpike Smoke

Smoked paprika, chipotle and mesquite with no sugar, so it can take a hard sear on a griddle without burning.

Grand Isle Hook Set Sauce

Some Heat, 8 fl oz, $12

Stir a spoonful into mayonnaise for a red pepper and lime spread that cuts the richness.

RiverKingz All Purpose Rub

Mild, 4 oz, $9

Garlic led and barely hot. Shake it on fries, onion rings or the grilled jalapenos.

Cook it at home

Two-hand griddle burgers with charred jalapenos

A wide, thin patty cooks fast and builds a dark crust. Season just before it hits the iron, toast a big bun, and char the jalapenos alongside.

What you need

  • 1 1/2 lb ground beef, 80 percent lean, in four loose balls
  • Turnpike Smoke
  • Salt
  • 4 large buns, five inches across if you can find them
  • 4 jalapenos, sliced into rings
  • 1/2 cup mayonnaise mixed with 1 tbsp Grand Isle Hook Set Sauce
  • Cheese, lettuce, tomato, pickles and onion as you like

How it goes

  1. Heat a cast iron griddle or skillet over high heat until it smokes lightly. Toast the cut sides of the buns and set them aside.
  2. Char the jalapeno rings on the dry griddle for 2 to 3 minutes and push them to the side.
  3. Set a beef ball down, press it flat and wide with a stiff spatula, and season the top with Turnpike Smoke and a pinch of salt.
  4. Cook 2 to 3 minutes until the edges are deep brown, flip, add cheese, and cook until the center reaches 160F.
  5. Spread the bun with the hot sauce mayonnaise, stack the patty with jalapenos and your extras, and eat with both hands.
Worth knowing. Press each patty once, in the first 30 seconds. Pressing later squeezes out the juice.
