St. Tammany Parish, the eastern Northshore

Slidell, Louisiana: where the lake ends and the swamp begins

Slidell is the largest city in St. Tammany Parish, an old railroad town on the east end of Lake Pontchartrain with Honey Island Swamp out the back door. Every fall it throws a cook-off built around emptying the game freezer before hunting season.

A railroad town on the water

Slidell grew up along the New Orleans and Northeastern Railroad in the 1880s. A centennial marker on Second Street records that the town was named for diplomat and U.S. Senator John Slidell by his son-in-law, Baron Frederic Erlanger, one of the railroad's financiers, and that it was incorporated on November 13, 1888. The old train depot still stands and now houses an art center and studio.

The city sits where Lake Pontchartrain gives out, on the eastern edge of the Northshore near the Mississippi line. Next door is Honey Island Swamp, which St. Tammany's visitor bureau describes as pristine, primeval wilderness. Tour boats glide through it in 90 minute and two hour trips all year, and passengers come back talking about alligators, wild boars, raccoons, owls, egrets, herons and nutria.

Olde Towne is the historic center, with antique shops, the Slidell Museum and more than a dozen murals by local artists along Front, First, Carey and Cousin Streets. Bayou Bonfouca winds past the edge of town, and the cooking around here leans hard on Louisiana classics: soft shell crab benedict at breakfast, oysters broiled in spinach cream on a deck over the bayou, gumbo and jambalaya at the festivals.

Fishing the salty end of the lake

Lake Pontchartrain is not really a lake. Visit The Northshore explains that it is a brackish estuary of about 630 square miles, fed by Northshore rivers and bayous and tied to the Gulf through the Rigolets and Lake Borgne. It gets saltier the farther east you go, and Slidell is on that east end.

More than a dozen fishing charters run out of Slidell after big speckled trout, bull redfish and tripletail, and the St. Tammany Parish Fishing Pier gives anglers without a boat a way onto the water. The parish says fall is when trout on the lake are easiest to catch. Fall is also when hunters start clearing freezer space, which is how Slidell ended up with a cook-off where wild game shares the tables with seafood and barbecue.

The Slidell year

Charter captains and St. Tammany's visitor bureau supply the fishing notes, and conditions change week to week. The state decides shrimp openings each year.

From the lineup

Bottles for a Slidell game freezer

Smoke for the venison, mustard for the sausage, heat for the fish fry.

Turnpike Smoke

Medium, 3.5 oz, $9

No sugar in this one, only smoke and chile from paprika, chipotle and mesquite, so lean venison can take a hot fire without the rub burning.

Mobile Bay Mustard BBQ

Medium, 8 fl oz, $12

A tangy mustard sauce, sweet enough to round it out. Brush it on wild game sausage or set out a bowl for dipping sliced backstrap.

Knock Your Sauce Off

Some Heat, 8 fl oz, $12

Our wing sauce: fresno heat, roasted garlic, guajillo, a little honey and lime. Toss fried trout or grilled shrimp in it too.

Cook it at home

Smoky venison backstrap on the grill

Backstrap is the prize cut of the deer. It has almost no fat, so it wants a hot fire, a short cook and a proper rest. Trim off the silver skin first.

What you need

  • 1 venison backstrap, about 1.5 to 2 lb, silver skin trimmed
  • Turnpike Smoke
  • 2 tbsp oil
  • Coarse salt
  • Mobile Bay Mustard BBQ for dipping

How it goes

  1. Take the backstrap out of the fridge 30 minutes ahead. Rub it with oil, a light pinch of salt and a heavy coat of Turnpike Smoke.
  2. Build a two zone fire with the coals on one side, and get the hot side very hot.
  3. Sear the meat over the coals, turning every 2 minutes, until it is crusted on all sides, about 8 minutes.
  4. Shift it to the cool side, cover the grill and keep going until the thickest part reads 140F.
  5. Rest 10 minutes; it will carry over to about 145F, a safe finish for a whole cut. Slice thin against the grain and put Mobile Bay Mustard BBQ on the side.
Worth knowing. Skip long soaks in vinegar or citrus. Acid turns backstrap mushy, and a dry rub and a hot fire are all it needs.
