Monroe County, the Lower Keys

Big Pine Key, Florida: lobster tails in Key deer country

The Lower Keys island with one traffic light, the world's smallest deer and a reef six miles offshore. Most of what lands on the grill here is spiny lobster.

Key deer country

Big Pine Key sits in the Lower Keys, the run of islands between the Seven Mile Bridge and Stock Island that the Monroe County tourism council sells on calm, seclusion and wildlife in the open. It is a small place, small enough that the U.S. Fish and Wildlife Service gives driving directions by the only traffic light on the island.

That light marks the Nature Center of the National Key Deer Refuge, set up in 1957. Key deer are the smallest subspecies of white tailed deer and live nowhere but the lower Florida Keys. Poaching and lost habitat cut them to a few dozen animals by the 1950s. With the refuge, and endangered listing in 1967, the herd recovered, and the service estimates about three quarters of it now lives on Big Pine and neighboring No Name Key.

The refuge asks two things of visitors: do not feed the deer, and drive slowly from Big Pine west to Lower Sugarloaf Key, especially at night when deer move most. The rut starts in September and October, and spotted fawns show up from late spring through summer.

On the water side, the island faces Looe Key Reef, about six miles south, which the tourism council counts among the most vibrant reefs in the Keys. On land, Lower Keys menus run to freshly caught spiny lobster and conch fritters.

Bringing lobster home the legal way

If you plan to catch your own lobster, know that the FWC rules are strict. You must carry a measuring device, and the carapace has to be longer than 3 inches, measured before the lobster leaves the water. Spears, hooks or anything that can puncture the shell are banned, recreational traps are banned, and egg bearing females go back.

Lobsters must reach land whole, because separating tail from body is prohibited in state waters. The regular season runs August 6 to March 31 with a bag of six per person. The two day sport season in late July keeps the same six lobster limit in Monroe County and adds a ban on night diving.

What is in season

A year on Big Pine Key

Lobster and stone crab dates are from the FWC and deer notes are from the refuge. Fish timing comes from the Monroe County tourism council's fishing calendar, which shows good fishing months, not legal harvest dates.

From the lineup

What we would pack for a Big Pine rental

Lobster, whatever the guide brings back, and a campsite grill.

RiverKingz All Purpose Rub

Mild, 4 oz, $9

Garlic led and barely hot, with low salt. Melt it into butter for lobster tails so the sweet meat still leads.

Grand Isle Hook Set Sauce

Some Heat, 8 fl oz, $12

Louisiana style, red jalapeño and roasted red pepper with a lime finish. Good on lobster, fried fish and morning eggs.

Beautiful Sunset

Mild, 3.5 oz, $9

Orange peel and ancho with a little sweetness. A mild rub for grilled shrimp or snapper at the end of a long boat day.

Cook it at home

Grilled spiny lobster tails with garlic butter

The tail holds most of the meat on a spiny lobster. Split it, baste it and keep the heat moderate so the meat stays tender.

What you need

  • 4 spiny lobster tails, thawed if frozen
  • 6 tbsp butter
  • 2 tsp RiverKingz All Purpose Rub
  • 1 lime, halved
  • Grand Isle Hook Set Sauce

How it goes

  1. Heat the grill to medium. Melt the butter with the RiverKingz and a squeeze of lime.
  2. With kitchen shears, cut down the center of the top shell to the tail fan, then split the meat lengthwise with a knife without cutting through the bottom shell.
  3. Open the tails like a book and brush the meat with the seasoned butter.
  4. Grill meat side down for 3 to 4 minutes, then turn shell side down, baste again and cook 4 to 5 minutes more, until the meat is opaque white all the way through.
  5. Serve with the rest of the butter, lime and Hook Set Sauce at the table.
Worth knowing. Pull the tails the moment the center turns from glassy to white. A minute too long and lobster goes rubbery.
