Matagorda County, where the Colorado River meets the Gulf

Matagorda, Texas: an 1827 port at the end of the Colorado

One of the oldest towns on the Texas coast is now a quiet place of a few hundred people, a levee, a river mouth and a long sweep of bay. Most visitors come to fish. Here is the back story, the seafood calendar and a whole flounder for the oven.

A port town that became a fishing town

Stephen F. Austin got permission from the Mexican government in 1827 to build a town near the mouth of the Colorado River to protect incoming settlers. Elias Wightman laid it out that year and brought in fifty or sixty colonists, most of them from New York. The Handbook of Texas says that in the 1830s Matagorda was the closest Texas port to New Orleans and a landing place for new arrivals by land and sea.

The town became the seat of Matagorda County in 1837 and had theaters, hotels and a newspaper within a year. During the Civil War it was one of eight Texas ports used by blockade runners carrying cotton out and supplies in. After the war came a beef packing plant and a hide and tallow factory, then hurricane after hurricane, and in 1894 the county seat moved inland to Bay City.

A log raft on the Colorado River blocked boat traffic until it was cleared in 1929. In the 1930s fish and oysters became a major local business, alongside shell dredging for roads and chicken feed. A hurricane in 1942 led to the levee that still rings the town, and after World War II Matagorda turned into a resort and fishing community.

River, bay and Gulf in one stop

The Lower Colorado River Authority runs Matagorda Bay Nature Park about 100 miles southwest of Houston, where the mouth of the Colorado feeds into the Gulf, ringed by marshes and wetlands. The park has a fishing pier, a boat ramp, kayak rentals for the marshes and RV sites, Airstreams and beach bungalows, several with their own gas grills.

That mix of river water, marsh and open Gulf is what pulls anglers down the last stretch of road. The Texas flounder closure from November 1 to December 14 is the one date every local keeps in mind. Before you keep a fish, check the current Texas Parks and Wildlife bag and length limits.

From the lineup

What we would pack for a Matagorda fishing trip

A mild rub that goes on anything, a hot sauce for the table, and a bright one for the grill at the campsite.

RiverKingz All Purpose Rub

Mild, 4 oz, $9

A savory garlic base with hardly any bite and low salt, gentle enough that a delicate flounder still tastes like flounder.

Grand Isle Hook Set Sauce

Some Heat, 8 fl oz, $12

Red jalapeno, roasted red pepper, a lime finish. Whisk a spoonful into warm butter and you have a sauce for any fish.

Beautiful Sunset

Mild, 3.5 oz, $9

Orange peel and ancho chile with a touch of sweetness. Our pick for redfish or chicken over the campsite grill.

Cook it at home

Whole roast flounder with Hook Set butter

Flounder is flat and thin, so a whole fish roasts fast and stays moist on the bone. Score it, season it, and finish it with a spicy butter.

What you need

  • 1 whole flounder, about 2 lb, scaled and gutted
  • RiverKingz All Purpose Rub
  • 3 tbsp butter
  • 1 tbsp Hook Set Sauce
  • 1 lemon, sliced
  • Oil for the pan

How it goes

  1. Heat the oven to 425F. Pat the fish dry and cut three diagonal slashes through the skin on the dark side, down to the bone.
  2. Rub the fish inside and out with a little oil and season it well with RiverKingz, working the rub into the cuts. Tuck lemon slices into the belly.
  3. Roast on an oiled sheet pan, dark side up, for 15 to 20 minutes, until the flesh is opaque at the backbone and flakes easily.
  4. While it roasts, melt the butter with the Hook Set Sauce and keep it warm.
  5. Spoon the butter over the fish at the table and lift the fillets off the bone with a spatula.
Worth knowing. Check doneness at the thickest part behind the head. When a knife slides the meat off the bone, it is ready.
