South Padre Island, Texas: red snapper at the bottom of the map

The last town on the Texas coast sits between the Gulf, the Laguna Madre and Brazos Santiago Pass, and its boats run offshore for red snapper. Here is when the snapper are legal, who started the island's turtle hospital, and how to grill a whole fish at home.

An island that waited for a bridge

South Padre Island is the resort town on the southern tip of Padre Island, about eighteen miles from Brownsville. The Handbook of Texas notes that from the late 1800s into the 1950s the only way across was by ferry. Real growth started after a swing bridge from Port Isabel opened in February 1954, and Hurricane Beulah set the young town back hard in 1967.

Tourism is the main trade now. The Texas Almanac counted 2,066 residents in 2020, a number that swells every spring break and every summer weekend. Most of those visitors eat seafood at least once, and the snapper on a local menu often comes from the same Gulf water you can see from a high balcony.

The island's most famous resident never sold a fish. Ila Fox Loetscher was a pilot before she was a conservationist; Sea Turtle Inc. says she was the first licensed female pilot in both Iowa and Illinois and one of the original Ninety Nines. She began caring for Kemp's ridley sea turtles in 1965 after volunteering at Rancho Nuevo in Mexico, and kept them at her island home.

So many visitors knocked on her door that in 1977 she formed Sea Turtle Inc. The group moved to 6617 Padre Boulevard in 1999, opened a six million dollar education center in 2018, and still treats injured turtles today. Locals called her the Turtle Lady of South Padre Island until she died in 2000.

Reading the red snapper rules

Red snapper is the prize fish for island charters and private boats alike, and Texas splits the rules by distance from shore. In state waters, out to nine nautical miles, the season stays open all year with a daily bag of four fish at 15 inches or longer. Anglers fishing with natural bait there must use circle hooks.

Federal waters run on a shorter leash. NOAA closed them to private anglers from January 1 to May 22, 2026, and Texas Parks and Wildlife reopened them on May 22 with a bag of two fish at 16 inches minimum. As of September 1 that federal season was still open, but the state watches landings and can ask for an early close, so check before a trip.

Cook it at home

Whole grilled red snapper with Cold Water

A two to three pound snapper grills whole in about 20 minutes. Scoring the sides lets the rub reach the meat, and the skin holds everything together on the grate.

What you need

  • 1 whole red snapper, 2 to 3 lb, scaled and gutted
  • 2 tbsp oil
  • Cold Water
  • 1 lime, sliced, plus wedges to serve
  • A handful of cilantro
  • Grand Isle Hook Set Sauce

How it goes

  1. Pat the fish dry and cut three deep slashes down to the bone on each side.
  2. Rub it inside and out with the oil and a generous coat of Cold Water, pushing the rub into the cuts. Tuck lime slices and cilantro into the belly.
  3. Clean and oil the grate well, then grill over medium high heat for 8 to 10 minutes a side. Turn it once, with two spatulas.
  4. The fish is done when the flesh at the thickest cut is opaque and flakes from the bone.
  5. Lift the fillets off the frame at the table and shake Grand Isle Hook Set Sauce over the top with fresh lime.
Worth knowing. If the skin sticks, wait another minute. It lets go of a clean, hot grate once it has seared.
