Monroe County, the Middle Keys

Marathon, Florida: where the stone crab claws come in

Stone crab season opened on October 15. In Marathon that means traps coming up, claws cooked on the dock within the hour, and a seafood festival every March run by the fishermen themselves.

A working waterfront in the middle of the Keys

Marathon covers the stretch from Long Key to the Seven Mile Bridge, roughly mile markers 47 to 61, right in the middle of the island chain. Visitors know it for Sombrero Reef, the Turtle Hospital, Crane Point's hammock trails and the old Seven Mile Bridge. Locals know it as a fishing town that never stopped being one.

The center of that trade is Keys Fisheries on the bay side, which started in 1967 with a fleet of six boats. A Keys Weekly visit in 2020 found it handling more lobster than any other facility in Florida, about a million pounds in a good year, and ranking first or second in the state for stone crab. It also supplies much of the seafood served at the Marathon Seafood Festival.

Stone crab is the claw you eat cold, and the reason is practical. At Keys Fisheries the crabs are cooked within an hour of reaching the dock, then chilled and sorted by size the next day. Vice president Gary Graves told Keys Weekly that if a raw claw gets cold, down around 50 degrees, the meat sticks to the shell and you cannot scrape it out. That is why claws are almost always sold already cooked.

The rules on the claw

The Florida Fish and Wildlife Conservation Commission sets the season from October 15 through May 1, closed from May 2. Only the claws may be taken, and a claw must measure at least 2 7/8 inches. Recreational crabbers can fish up to five registered traps and keep a gallon of claws per person or two gallons per boat, whichever is less.

Taking both claws is legal if both are legal size, but the FWC notes that a crab left with one claw can feed faster and regrow the missing one sooner. Stone crabs regenerate claws, which is what makes this a renewable fishery when people handle it with care.

What is in season

The Marathon seafood calendar

Stone crab and lobster seasons come from the FWC. Fish timing comes from the Monroe County tourism council's fishing calendar, which shows good fishing months, not legal harvest dates.

Cracked stone crab claws with a mustard dip

There is no cooking here, because the dock already did it. The job is to crack the claws cleanly and make a good dip.

What you need

  • 2 to 3 lb cooked stone crab claws, kept cold
  • 1/2 cup mayonnaise
  • 2 tbsp Mobile Bay Mustard BBQ
  • 1 lemon, plus wedges for the table
  • Grand Isle Hook Set Sauce
  • A kitchen towel and a wooden mallet or the back of a heavy spoon

How it goes

  1. If the claws are frozen, thaw them overnight in the fridge. Never thaw them in warm water.
  2. Stir the mayonnaise, Mobile Bay Mustard BBQ and a squeeze of lemon together and chill the dip for 20 minutes.
  3. Lay a claw on the towel, fold the towel over it and give each section of shell one firm tap to crack it without crushing the meat.
  4. Peel back the shell pieces, leaving the meat attached to the pincer as a handle.
  5. Serve the claws cold on ice with the mustard dip, lemon wedges and Hook Set Sauce.
Worth knowing. Crack the claws just before you eat. Cracked claws dry out and lose their sweetness fast.

Questions

Questions about Marathon

When is stone crab season in Florida?

October 15 through May 1 in state waters, closed from May 2, according to the FWC. Claws must be at least 2 7/8 inches.

March 13 and 14, 2027, at Marathon Community Park. It will be the 51st festival, according to the official site.

Why are stone crab claws sold already cooked?

Because the meat sticks to the shell if a raw claw gets cold. Marathon's fish house cooks claws within an hour of landing, then chills them.
