Grand Isle, Louisiana: cook it straight from the weigh-in

Louisiana's only inhabited barrier island runs a fishing rodeo every few weeks from May to October, and its food is whatever came off the boat that day. Our Hook Set Sauce is named for it.

The island

Grand Isle is a barrier island on the Gulf, built from Mississippi River sediment, with one of the last live oak chenier forests on the Gulf Coast. The town calls itself Louisiana's only inhabited barrier island. LA Highway 1 ends here, and the causeway at the west end is the only road in or out.

People have fished here for as long as anyone has lived here. The Chitimacha were the first known inhabitants. After the Spanish divided the island into four land grants in the 1780s, settlers harvested shrimp and oysters, and some traded with Jean Lafitte's privateers. By the 1800s New Orleanians were coming down by steamer for the beaches and the fishing.

The town counts more than 280 species of fish and four seasons of fishing, from the surf, the piers, boats and charters. Its seafood docks sell jumbo shrimp, softshell crabs, lump crabmeat, oysters, mahi and tuna, which tells you most of what you need to know about dinner.

Rodeo season is the food season

The International Grand Isle Tarpon Rodeo is the big one, held in late July. Its organizers call it the oldest fishing tournament in the United States and date it to 1928. Around it the island runs about a dozen rodeos a season, from the Hurricane Hole Invitational in May to the Ladies Rodeo in October, with two redfish rodeos in September.

That is the island's food story. Fish get weighed, cleaned at the dock and cooked the same evening, and the Tarpon Rodeo's welcome party serves free boiled shrimp plates. Our Grand Isle Hook Set Sauce is named for the island and for the moment the fish takes the bait, and it is built for exactly this food: boiled shrimp, fried fish, oysters and gumbo.

What we would pack for Grand Isle

Three bottles for a week of cooking whatever the boat brings back.

Grand Isle Hook Set Sauce

Some Heat, 8 fl oz, $12

Named for the island. Louisiana style, bright up front, with a quick kick that fades. Made for boiled shrimp, oysters, fried fish and gumbo.

Gulf Coast Blackening

Some Heat, 3 oz, $9

Smoky and herby with a pepper build that keeps going. Our blend for redfish, speckled trout and any firm white fish.

Port A Shrimp Shack

Some Heat, 3.5 oz, $9

Our boil seasoning, citrus and celery forward, that works dry too. Shake it on fried or grilled shrimp straight from the dock.

Cook it at home

Redfish on the half shell

The dock cook's way to do a redfish: leave the scales and skin on one side so the fillet cooks in its own shell on the grill and stays juicy.

What you need

  • 2 redfish fillets with the scales and skin left on, about 1 lb each
  • Gulf Coast Blackening
  • 4 tbsp butter, melted, with a squeeze of lemon
  • Grand Isle Hook Set Sauce for the table

How it goes

  1. Heat the grill to medium high.
  2. Brush the flesh side of each fillet with lemon butter and season it heavily with Gulf Coast Blackening.
  3. Lay the fillets scale side down on the grate. Do not flip them.
  4. Close the lid and cook 12 to 18 minutes, depending on thickness, until the flesh is opaque all the way through and flakes. Baste with more butter halfway.
  5. Lift them off with a wide spatula, scales and all, and spoon the meat out of the shell at the table with Hook Set Sauce.
Worth knowing. When you clean the fish, fillet it without scaling. The scales and skin are the pan.
