Santa Rosa County, on the Gulf east of Pensacola Beach

Navarre Beach, Florida: ling season off the longest pier

Navarre Beach is the quiet stretch of sand east of Pensacola Beach, and its pier reaches farther into the Gulf than any other in Florida. Every spring, anglers line the rail watching for one fish above all. Here is the fish they are waiting for, the rules if one bites, and a grill method that suits it.

The pier that sets the pace

Navarre Beach sits in Santa Rosa County, on the Gulf side east of Pensacola Beach. VISIT FLORIDA describes it as a place that has slid under the radar, with emerald water, wide uncrowded sand and a pace that makes people forget their email. Santa Rosa County manages the beach, and its centerpiece is the Navarre Beach Pier.

Santa Rosa County bills it as the longest pier in Florida and the Gulf of Mexico. It reaches 1,545 feet out from the sand and stands 30 feet above the water, high enough that anglers can watch schools of fish, rays and dolphins move below them. A privately run bait and tackle shop on site rents rods, and there is an outdoor restaurant for anyone who just wants the view and the sunset.

The pier has rules that tell you how seriously it is fished. No fish of any kind may be left on the deck, there are no cleaning tables, no lights are allowed, and sabiki rigs are banned on the octagon at the far end, where all extra tackle, coolers and carts must stay in the middle, away from the rail. In winter the gates open at 5 a.m. and close at 8 p.m.; in summer they stay open until 11 p.m.

Ling, lemonfish, cobia

A UF/IFAS Extension article from Escambia County counts a string of names for this fish: ling, cabio, lemonfish, crabeater, black kingfish and sergeant fish, among others. Cobia is the accepted one, but along the Florida Panhandle most people still say ling. The Cajun name is limon, which may be where lemonfish came from.

Cobia hate cold water. The same article explains that Gulf fish head south toward the Florida Keys for winter, then push back up the coast and westward across the Panhandle each spring on their way to breeding grounds in the northern part of their range. An adult averages about five feet and can top 100 pounds, and its low, flat head makes it look a lot like a shark from the side. When one cruises past a pier this tall, everyone on the rail sees it at once.

Keeping one means following a short, strict FWC rule. Measured from the snout to the fork, a legal cobia is 36 inches or longer. Each angler may take a single fish, and no boat may come home with more than two. Legal gear covers hook and line, cast nets, seines, gigs and spears.

From the lineup

Three bottles for the pier bucket

Cobia is firm and mild, closer to a pork chop than to flaky white fish, so it can take a bold rub.

Gulf Coast Blackening

Some Heat, 3 oz, $9

Smoky and herby, with pepper that builds slowly. Cobia's dense meat can carry a heavy coat of it.

Knock Your Sauce Off

Some Heat, 8 fl oz, $12

Our wing sauce, with honey and red fresno. Brushed on in the last minute of grilling, it glazes instead of burning.

Port A Shrimp Shack

Some Heat, 3.5 oz, $9

Celery, coriander and citrus for whatever shrimp or whiting the rest of the cooler holds.

Cook it at home

Blackened cobia steaks with a sweet heat glaze

Cobia holds together on a grate better than most Gulf fish, so you can cook it like a steak. Cut it thick and do not rush the preheat.

What you need

  • About 2 lb cobia, cut into steaks 1 1/2 inches thick
  • Gulf Coast Blackening
  • Olive oil, a couple of tablespoons
  • Knock Your Sauce Off
  • 2 limes, halved

How it goes

  1. Coat the steaks lightly in oil, then season them all over with Gulf Coast Blackening. Give them 15 minutes on the counter.
  2. Meanwhile, heat the grill to a steady medium high and wipe the grate with an oiled towel.
  3. Lay the steaks down and leave them for 4 to 5 minutes. They will let go of the grate when the first side is seared.
  4. Flip and cook 3 or 4 minutes more. Check the thickest piece: the inside should be white and starting to separate.
  5. With about a minute left, paint the tops with Knock Your Sauce Off. The honey will glaze, not char.
  6. Finish with a squeeze of grilled lime and eat while hot.
Worth knowing. Cobia has a dark bloodline along the fillet. Trim most of it away before cooking for a milder, cleaner taste.
