North Padre Island, Texas: cooking where the pavement ends

South of Corpus Christi the road gives out and the beach becomes the highway. Here is what the surf gives up through the year, how to catch a sea turtle release, and how to cook the day's whiting in foil over a beach fire.

A wild island inside a city's reach

North Padre Island is the stretch of barrier island across the Laguna Madre from Corpus Christi. Part of it lies inside the city, and below that the National Park Service protects 66 miles of wild coastline as Padre Island National Seashore, along with one of the last intact coastal prairies in the country.

People have worked this sand for a long time. The park service notes that Native Americans, Spanish explorers and cattle ranchers all walked these shores, and the old Novillo Line Camp still stands as a reminder of the ranching years. On the bay side, the hypersaline Laguna Madre spreads into tidal mud flats that teem with life.

Most visitors come for the beach. When conditions allow, cars and trucks can drive the sand past the end of the pavement. Little Shell Beach, Big Shell Beach, Yarborough Pass and Mansfield Channel can only be reached that way. The park recommends four wheel drive, warns that a high tide of 1.5 feet can cover the beach to the dunes, and does not tow private vehicles.

That is why a cook kit matters here. The park tells drivers to carry extra food, water and a full tank, and warns that finding cell service can mean climbing a dune. Whatever you catch, you clean and cook on the spot.

Bob Hall Pier is back

Hurricane Hanna wrecked Bob Hall Pier in 2020. Nueces County demolished what was left in 2022, began rebuilding in 2024, and cut the ribbon on a new 1,200 foot pier on February 24, 2026. KRIS 6 News reported a $28.5 million price tag and anglers catching fish within hours of the opening.

The county made the pier free for its first 90 days. Commissioner Brent Chesney told reporters a restaurant, concession stand, restrooms, a parking lot and a new road are still to come, so expect the area around the pier to keep changing for a while.

Bottles for a beach camp cooler

One rub that goes on anything, one sauce to finish fish off the fire, and a blend for the shrimp you brought from town.

RiverKingz All Purpose Rub

Mild, 4 oz, $9

Garlic led and low salt, with barely any heat. It goes on whiting, eggs, potatoes and anything else in a camp box.

Knock Your Sauce Off

Some Heat, 8 fl oz, $12

Red fresno, roasted garlic, guajillo, honey and lime. Brush it on fish once the foil is open, so the honey glazes instead of scorching.

Port A Shrimp Shack

Some Heat, 3.5 oz, $9

Named for Port Aransas, just up the coast. Use it dry on grilled shrimp or as a boil for a camp pot.

Cook it at home

Foil packet whiting on a beach grill

Whiting are small, white and mild, and a foil packet steams them in their own juice in about 12 minutes. It works on a camp grill or a grate over coals, with no pan to scrub after.

What you need

  • 6 to 8 whiting fillets, or 4 small whole fish cleaned
  • RiverKingz All Purpose Rub
  • Salt
  • 4 tbsp butter, cut in pieces
  • 1 lemon, sliced
  • 1 small onion and 1 bell pepper, thinly sliced
  • Knock Your Sauce Off
  • Heavy duty foil

How it goes

  1. Tear four sheets of heavy duty foil and lay onion and pepper in the middle of each.
  2. Season the fish on both sides with RiverKingz All Purpose Rub and a pinch of salt, then set it on the vegetables with butter and lemon on top.
  3. Fold the foil into tight packets with a little headroom and set them on the grate over medium coals.
  4. Cook 10 to 14 minutes, then open one packet carefully. The fish is done when it is opaque and flakes easily.
  5. Open the packets, brush the fish with Knock Your Sauce Off, close them for one more minute, and eat straight from the foil.
Worth knowing. Pack the sauce bottle in the cooler, not the hot truck bed. It pours better cool and keeps the lime bright.
