Iberia Parish, Bayou Teche

New Iberia and Avery Island: hot pepper, salt and sugar

The parish tourism bureau calls New Iberia the spiciest, saltiest, sweetest place on Earth. Pepper sauce from Avery Island, salt from the dome beneath it and sugar from the cane fields all around make the case.

Grand Isle Shrimp and White Rice

The Queen City of the Teche

Spanish settlers led by Francisco Bouligny founded New Iberia in 1779 on the banks of Bayou Teche, and Acadians exiled from Nova Scotia followed. Locals still call it the Queen City of the Teche. Its historic downtown, with a live oak lined Main Street, won a Great American Main Street Award in 2005. Close by are Shadows-on-the-Teche, an antebellum house Union soldiers occupied during the Civil War, and the Bayou Teche Museum, which holds George Rodrigue's studio.

Also in town is the Conrad Rice Mill, which bills itself as the oldest rice mill in America. P.A. Conrad founded it in 1912, cutting rice by hand and drying it on the levees before milling. The name Konriko, short for Conrad Rice Company, was trademarked in the 1950s. Mike Davis bought the idle mill in 1975 and had it running again within ten days. It still uses a belt drive, rare enough that the building went on the National Register of Historic Places in 1981.

New Iberia is also the home of James Lee Burke, the Pulitzer Prize winning author whose Dave Robicheaux novels are set here, and the tourism bureau runs a walking tour of the places in the books.

Avery Island: the salt and the pepper

Avery Island is not really an island. It is one of five salt domes that rise above the flat coastal marsh, about 2,200 acres of live oaks and subtropical plants sitting on a deposit of rock salt thought to go deeper than Mount Everest is tall. Salt springs may have drawn people here as long as 12,000 years ago. The salt mattered so much that, during the Civil War, Union forces based at Brashear (now Morgan City) planned to destroy the Avery Island salt mines.

After the war E. McIlhenny, a former New Orleans banker, planted pepper pods that a traveler from Mexico had given him in his in-laws' garden on the island. Around 1866 he crushed the ripest peppers with Avery Island salt, aged the mash, added French white wine vinegar, and bottled it. He grew his first commercial crop in 1868 and the next year shipped 658 bottles to grocers along the Gulf. That was Tabasco, still made on the island. The factory and Jungle Gardens, with its Bird City wildfowl refuge and a grove of giant timber bamboo, are open to visitors.

From the lineup

Bottles for a rice pot

Jambalaya, gumbo and rice and gravy are the everyday food here. These three earn their place.

Turnpike Smoke

Medium, 3.5 oz, $9

Smoked paprika, chipotle and mesquite with no sugar. Rub it on chicken before browning and the whole pot of jambalaya tastes of smoke.

Grand Isle Hook Set Sauce

Some Heat, 8 fl oz, $12

Our Louisiana style hot sauce, built on red jalapeño and lime. A splash in the gumbo bowl, or on boudin and eggs in the morning.

RiverKingz All Purpose Rub

Mild, 4 oz, $9

Mild and garlic forward, with a deep savory base. Low salt, so you can season the stock and the meat without the pot turning salty.

Cook it at home

Brown jambalaya with smoked chicken and sausage

Acadiana jambalaya gets its color from browning, not tomato. Good long grain rice, the kind milled in town, does the rest.

What you need

  • 2 lb boneless chicken thighs, in bite size pieces
  • 1 lb smoked pork sausage, sliced
  • Turnpike Smoke
  • 1 onion, 1 bell pepper and 2 celery stalks, diced, plus 3 garlic cloves
  • 2 cups long grain white rice
  • 4 cups chicken stock
  • Green onions and Grand Isle Hook Set Sauce

How it goes

  1. Toss the chicken with 2 tablespoons of Turnpike Smoke. Brown it in a little oil in a heavy Dutch oven, in batches, until dark on all sides. Lift out, then brown the sausage.
  2. Cook the onion, pepper and celery in the fat for about 8 minutes, scraping up the brown bits from the bottom. Add the garlic for a minute.
  3. Return the chicken and sausage, add the rice and stir to coat every grain. Pour in the stock, bring to a boil and taste the liquid. It should be well seasoned.
  4. Cover tightly, turn the heat to its lowest setting and cook 25 minutes without lifting the lid.
  5. Take it off the heat and leave it covered 10 minutes. The chicken will be well past 165F by now.
  6. Fluff with a fork, scatter green onions over the top and pass the Hook Set Sauce.
Worth knowing. Let the bottom of the pot get properly dark before the vegetables go in. That brown crust is where the color and the flavor of the whole pot come from.
