Cameron Parish, Southwest Louisiana

Holly Beach and Cameron, Louisiana: crabs on a string at the Cajun Riviera

Louisiana's Outback has 26 miles of open Gulf beach, very few stores and some of the easiest crabbing on the coast. Here is how the parish eats, when to come, and what to do with a cooler full of blue crabs.

A beach town that keeps coming back

Holly Beach is a small unincorporated community on the Gulf in Cameron Parish, roughly 120 miles east of Houston, on the Creole Nature Trail All-American Road. Its nickname, the Cajun Riviera, still turns up in the Lake Charles tourism bureau's listings. It was never a resort. It was raised camps, trailers, a few bars and seafood shops, and on summer holiday weekends its population climbed into the thousands.

Hurricane Rita in 2005 destroyed every structure in town, and Ike hit again in 2008. When the Associated Press visited in 2009, about a dozen people lived there year round and the nearest groceries were 20 miles north in Hackberry. Families still came for the Fourth of July and Labor Day, camping on the sand and catching flounder, crabs and shrimp. One resident remembered the smell of crabs and shrimp boiling up and down the street. A handful of owners have since rebuilt on tall stilts.

The parish around it is huge and nearly empty. The Census counted 5,617 people in 2020 across more than 1,280 square miles of land, about four people per square mile. Services are thin, so the tourism bureau tells visitors to fill the tank and pack food, water and bug spray before they head south.

How to crab the Creole Nature Trail

Crabbing here is a roadside sport. The trail guide says blue crabs gather around the small bridges over the roadside canals, and it points to the Blue Crab and West Cove recreation areas on Sabine National Wildlife Refuge and to Price Lake Road on Rockefeller Wildlife Refuge. The kit is cheap: cotton string, raw chicken or turkey necks, a dip net, a bucket and an ice chest.

Tie on the bait, let it sink to the bottom, and when you feel a tug, raise it slowly and scoop the crab from below. Synthetic line is banned because it never breaks down. Since June 1, 2022 Louisiana has required a license to crab for fun, and Rockefeller Refuge also needs a WMA permit unless your license already covers it. Go early or late on a moving tide, and plan around the full moon, when the guide says crabs run bigger. After a storm, walk the beach at low tide for whelks, angel wings and the odd sea bean.

Where to eat and what to bring home from Holly Beach

The places we would send a friend: kitchens locals swear by and shops worth the stop. Every one was open when we checked in October 2026. Hours run seasonal on the coast, so call ahead.

Hurricane Laura (2020) destroyed most of Holly Beach and Cameron, and there are almost no restaurants on the beach itself. Call ahead, hours are short and change with the season. Sulphur, about 45 minutes north on the Creole Nature Trail, has the most choices.

What to pack for the Cajun Riviera

Stores are few and far apart out here, so bring the seasoning with you.

Port A Shrimp Shack

Some Heat, 3.5 oz, $9

Our boil seasoning that also works dry. Celery, coriander and citrus, made for shrimp and just as good tossed with boiled crabs and butter.

Grand Isle Hook Set Sauce

Some Heat, 8 fl oz, $12

Bright and quick, with a kick that fades. Shake it over picked crab meat, boiled shrimp or a raw Calcasieu Lake oyster.

Gulf Coast Blackening

Some Heat, 3 oz, $9

For the flounder the surf fishermen bring in. Smoky, herby and built to crust any firm white fillet in a hot skillet.

Cook it at home

Garlic butter blue crabs

A dozen crabs from the canal, boiled plain, cracked, then tossed in garlic butter with a dry boil seasoning. It works on a camp stove as well as it does at home.

What you need

  • 12 live blue crabs, kept cold in an ice chest
  • 1/2 cup salt and 2 lemons, halved, for the pot
  • 1 stick butter and 6 garlic cloves, minced
  • Port A Shrimp Shack
  • Grand Isle Hook Set Sauce and French bread for the table

How it goes

  1. Bring a big pot of water to a rolling boil with the salt and lemon halves. Throw out any crab that died in the cooler.
  2. Drop in the live crabs, let the water return to a boil and cook 10 to 12 minutes, until every shell is bright orange red.
  3. Drain and let them cool enough to handle. Lift off the top shell, scrape away the gills and snap each body in half.
  4. Melt the butter over low heat, add the garlic and cook 2 to 3 minutes without browning. Stir in 1 to 2 tablespoons of Port A Shrimp Shack.
  5. Toss the crab halves in the butter in a big bowl until every crack is coated, then pile them on newspaper with Hook Set Sauce and bread.
Worth knowing. Cracking the crabs before they meet the butter is the whole point. The seasoning gets into the meat instead of sliding off the shell.
