Sarasota, Florida: Pinecraft pie, bay fish and a Saturday market

Sarasota has a neighborhood where Amish and Mennonite snowbirds ride tricycles to lunch and one bakery turns out more than 100 pies a day. Here is what the city eats, when to come, and a skillet chicken to make at home.

Five JollyGringo'z bottles lined up behind a grill of chicken at sunset

Pinecraft, the winter village

Pinecraft sits a few miles inland from downtown Sarasota, a planned grid of small homes and shops around the corner of Beneva Road and Bahia Vista Street. According to Visit Sarasota County, Amish and Mennonite farmers were persuaded to come here in the 1920s to grow celery. The soil let them down. The winters did not, and many of them kept coming back.

Today thousands of Amish and Mennonite visitors return every winter from Indiana, Ohio, Pennsylvania and as far away as Canada, and the street traffic is a steady stream of adult tricycles. The county tourism office names December through April as the best time to go. It also points out that Amish businesses close on Sundays, so plan the pie run for Monday through Saturday and get there early.

The food is farmhouse cooking, and it is the reason for the lines. Yoder's Amish Village has been a Sarasota tradition since 1975, known for pot roast, very large fried chicken and pies: more than 100 fresh pies in over 25 varieties every day, many still made from Mrs. Yoder's original recipes. Peanut butter cream is the famous one. Der Dutchman, in the heart of the neighborhood, serves broasted chicken, meatloaf and a house dish called Noodles Over Mash, and its bakery sells pies, cinnamon rolls and fritters to carry home.

Behind Yoder's, Pinecraft Park hosts shuffleboard, horseshoes and bocce for much of the day. Phillippi Creek runs alongside it, brackish water where you may spot manatees, otters and snook. Motorboats do not come this far up the creek, which keeps it as quiet as the neighborhood.

The rest of the Sarasota table

Downtown, the Sarasota Farmers Market has run since 1979, when Paul Thorpe and the Downtown Merchants Association started it to draw people back into the city center. It sets up every Saturday, rain or shine, from 7 a.m. to 1 p.m., centered on Main Street and Lemon Avenue and stretching north to First Street and south to Pineapple Avenue. Expect produce growers, prepared food, plants and local artisans, plus free booth space each week for local nonprofits.

On the water, Sarasota has fishing rules of its own. The Florida Fish and Wildlife Conservation Commission manages a Sarasota Bay region that runs from State Road 64 in Manatee County south to a line near the Venice airport, with its own limits for snook, redfish and seatrout. Snook cannot be sold anywhere in Florida, so a snook dinner here means someone caught it. Stone crab claws are the cool weather treat, harvested from October 15 through May 1.

What we would bring to a Pinecraft supper

Farmhouse food wants a savory base and a bright sauce, not more salt.

RiverKingz All Purpose Rub

Mild, 4 oz, $9

Garlic led, with a deep savory base and barely any heat. Our rubs run about 10 percent salt, so it seasons fried chicken without making it salty.

Grand Isle Hook Set Sauce

Some Heat, 8 fl oz, $12

Louisiana style hot sauce with red jalapeño, roasted red pepper and a lime finish. A few dashes cut right through a rich plate of fried chicken.

Beautiful Sunset

Mild, 3.5 oz, $9

Dried orange peel and ancho, a little sweet. Good on chicken and pork chops, and on a white fillet from the bay.

Cook it at home

Crisp skillet chicken for a pie night supper

Fried chicken is what fills the plates in Pinecraft. This is a home version in cast iron, seasoned with a low salt rub so the crust tastes of garlic and not just salt. Save room for pie.

What you need

  • 3 lb bone-in chicken thighs and drumsticks
  • RiverKingz All Purpose Rub
  • 1 cup buttermilk
  • 1 1/2 cups flour
  • Neutral oil for shallow frying
  • Grand Isle Hook Set Sauce for the table

How it goes

  1. Pat the chicken dry and season it all over with RiverKingz. Turn it in the buttermilk and refrigerate for at least an hour.
  2. Mix the flour with another tablespoon of RiverKingz. Lift each piece from the buttermilk, let it drip, then press it firmly into the flour.
  3. Heat about half an inch of oil in a large cast iron skillet to 325 to 350F.
  4. Fry in batches, skin side down first and without crowding, about 12 to 15 minutes a side, turning once the crust is deep golden.
  5. Check the thickest piece next to the bone. It is done at 165F. Drain on a rack rather than paper so the bottom stays crisp.
  6. Serve hot with Hook Set Sauce on the table.
Worth knowing. Keep the oil steady. If it drops much below 300F the crust soaks up grease, and if it climbs past 375F the outside browns before the meat at the bone is cooked.
