Nueces County, the Coastal Bend

Mustang Island, Texas: the barrier island the wild horses named

A strip of sand, dune and salt flat between Corpus Christi Bay and the open Gulf, with a state park laid across the middle of it. Here is what the island gives you to eat, when to come for it, and a trout supper built for a camp burner.

The island the horses named

Texas Parks and Wildlife says the island took its name from the wild horses that roamed it for hundreds of years. Nobody is sure how they got here. Spaniards may have landed them, or they may have swum ashore from a wreck. Ranching pushed into their range through the 19th century, and the herds were gone by the late 1800s.

People were here long before the horses. The Karankawa lived on the island on fish, shellfish, small game and local plants, and the French explorer Jean Beranger recorded seeing them in the early 1700s. Settlers ran cattle, sheep and hogs from the mid 1840s, but the island was hard to reach and short of drinking water, so few stayed.

Texas Parks and Wildlife bought 3,954 acres in 1972 and opened Mustang Island State Park in 1979. The park holds a full cross section, Gulf beach on one side and bay shore on the other, and the fishing village at the north end is the only town on the strip.

That shape is why the island eats the way it does. There is no restaurant row out in the middle of it, so most meals get cooked where you are standing: a burner at a campsite, a grill at a rental, a skillet on a tailgate.

Highway 361, the dune line and Fish Pass

State Highway 361 runs the length of the island behind the foredunes. The ground averages about eight feet above sea level, so that dune line is most of what stands between the road and a high tide. The park asks visitors to stay off the dunes and to leave glass at home.

Partway down the park beach are the Fish Pass jetties, two rock arms left from a water exchange channel cut through the island in the early 1970s. The pass silted up in the 1980s, but the jetties stayed put. Texas Parks and Wildlife Magazine calls the spot legendary for surfers, best in winter, when the fronts swing the swell from southeast to northeast.

The bay side is the quieter half. Three paddling trails, the North Trail at 8.5 miles, the Shamrock Loop at 5.24 miles and the Ashum Trail at 6.8 miles, follow the western shoreline through what the agency calls some of the best shallow water fishing in Texas. Slide out of a kayak, wade the grass and the sand potholes, and what comes back to camp is spotted seatrout, redfish and black drum. The same shoreline carries the Mustang Island Loop of the state birding trail.

Festivals and events

Island dates worth planning around

The island runs no food festival of its own. What it has instead is beach days with a job attached and a ranger waiting at sunrise. Dates update every month: confirmed means the organizers posted it, expected means it follows the usual pattern.

From the lineup

Three bottles for a camp table

A camp table does not hold much, so we pack light: one rub for everything, one for white fish, one with lime in it.

RiverKingz All Purpose Rub

Mild, 4 oz, $9

Garlic led and deep savory with barely any heat, so it suits eggs at six in the morning and potatoes at six at night. Low salt, which matters when one jar does a whole week.

Beautiful Sunset

Mild, 3.5 oz, $9

Orange peel over ancho, mild, with a touch of sweetness. Our pick for trout, drum and any soft fillet a blackening blend would bury.

Cold Water

Medium, 3.5 oz, $9

A Latin blend, cumin forward, with Mexican oregano and dried lime behind it. Half a teaspoon in pan butter carries a plain fillet.

Cook it at home

Bayside trout with orange and ancho butter

Wade the grass flats in the morning, keep a few trout inside the slot, and cook them that evening on a camp burner. One pan, twenty minutes.

What you need

  • 4 spotted seatrout fillets, skin off, about 5 oz each
  • Beautiful Sunset
  • Cold Water
  • 4 tbsp butter
  • 2 cloves garlic, sliced thin
  • 1 orange, half juiced and half cut into wedges
  • Oil for the pan
  • Salt

How it goes

  1. Dry the fillets with a paper towel, then dust each face with Beautiful Sunset and a pinch of salt, light on the thin tail end.
  2. Put a film of oil in a heavy skillet and bring it to a shimmer over a strong flame. Set the fillets in and leave them for about 3 minutes.
  3. Turn them once and give them 2 minutes more, until the thickest part flakes under a fork. Move them onto plates.
  4. Drop the heat, add the butter and garlic and swirl for a minute. Stir in the orange juice and half a teaspoon of Cold Water, and let it bubble until glossy.
  5. Spoon the pan butter over the fillets and serve with the orange wedges.
Worth knowing. Trout is softer than redfish and breaks up if you keep moving it. One turn, then leave it.

Questions

Questions about Mustang Island

Why is it called Mustang Island?

For the wild horses. Texas Parks and Wildlife says they roamed the island for hundreds of years, brought by Spaniards or washed ashore from a wreck, until ranching pushed the last herds out by the late 1800s.

What is there to do at Mustang Island State Park?

Swim, surf, fish, picnic, bird and camp. There are 48 water and electric campsites and 50 drive-up primitive sites, plus two beach wheelchairs the park lends out free.

Can you fish the bay side of Mustang Island?

Yes, and the shallow water is the point. Three paddling trails run the western shoreline in Corpus Christi Bay through what the state calls some of its best shallow water fishing.

What is Fish Pass on Mustang Island?

A water exchange channel cut through the island in the early 1970s. It silted up in the 1980s, but its two jetties are still there, and they hold the best winter surf on this part of the coast.
