Hillsborough County, Tampa Bay

Tampa, Florida: the Cuban sandwich, by city resolution

Few cities have taken a formal vote on a sandwich. Tampa did. Here is what the council put in it, where the bread comes from, when Ybor City throws its sandwich party, and a mojo pork Cuban to press in your own kitchen.

Mango Smoke Pulled Pork

Defined, authenticated and official

In April 2012 the Tampa City Council made the Historic Tampa Cuban Sandwich the city's signature sandwich. WUSF reported that the reading of the resolution and the vote took about two minutes, less time than it takes to order one at a busy lunch counter, and the result was unanimous. The sandwich it described is marinated pork, Genoa salami and sweet ham. The salami is the Tampa touch.

Councilwoman Yvonne Yolie Capin had wanted to trademark the name too, WUSF noted, but dropped the idea once she learned that anyone using the phrase would then need city permission. Council Chairman Charlie Miranda used the moment to needle her about mustard, mayonnaise, lettuce and tomatoes, and whether it had to be cooked at all. Those arguments have not gone away.

The bread matters as much as the fillings. La Segunda Bakery in Ybor City has been family owned since 1915, when Juan More brought a recipe for Cuban bread to the neighborhood. ABC's Localish reported that its bakers turn out about 18,000 loaves a day and still lay a strip of fresh palmetto leaf down the center of each one, a slow old habit that shapes the crust. They even change the water in the dough to match the humidity outside.

Ybor City on a weekend

Ybor is where the sandwich and the bread meet. The Ybor City Chamber of Commerce calls the Ybor City Saturday Market the largest continuously running outdoor market in the Tampa Bay area. It sets up in Centennial Park every Saturday from 9 a.m., with local produce, baked goods, jams, sauces, herbs, plants and handmade goods, and admission is free.

Each spring the same park hosts the Cuban Sandwich Festival, a free street party built around a contest that draws restaurants from across the country and abroad. The 15th edition ran on Sunday, March 29, 2026, from noon to 6 p.m., with live music, salsa lessons and tastings of the contest entries in a VIP area at the Ybor City Museum Gardens.

Cook it at home

A pressed mojo pork Cuban

The Tampa Cuban starts with marinated roast pork. We rub a shoulder with Cold Water, soak it in citrus and garlic, roast it low until tender, then press it with ham, Genoa salami, Swiss and pickles on Cuban bread.

What you need

  • 3 lb boneless pork shoulder
  • Cold Water
  • Juice of 2 limes and 1 orange, with 4 cloves garlic, crushed
  • 1 loaf Cuban bread
  • Sliced sweet ham, Genoa salami and Swiss cheese
  • Dill pickle chips and Mobile Bay Mustard BBQ

How it goes

  1. Rub the pork all over with Cold Water. Mix the citrus juice and garlic, pour it over the pork in a bag and refrigerate overnight.
  2. Roast the pork in a covered pan at 300F for 3 to 4 hours, until it is fork tender. Shoulder is ready when it pulls apart easily, well past the 145F safe point for pork.
  3. Rest the pork, slice it thin against the grain and spoon some pan juices over the slices.
  4. Split the bread lengthwise and spread a thin layer of Mobile Bay Mustard BBQ on the cut sides. Layer ham, pork, salami, Swiss and pickles.
  5. Press the sandwich in a hot buttered skillet under a heavy pan, about 3 minutes a side, until the bread is flat and crisp and the cheese melts. Cut it on the diagonal.
Worth knowing. Cuban bread goes stale fast, which is part of why it gets pressed. Buy it the day you cook, or warm a day old loaf in the oven before you build the sandwich.
